Chicken noodle soup is an international dish with great benefits for your health and excellent for cold weather. Ingredients
- (4.5-5 qts) Chicken Stock
- (1.5-2 lbs) Shredded Chicken
- (12 oz) Potato, medium dice
- (8 oz) Onion, small dice
- (6 oz) Carrot, small dice
- (4 oz) Celery, small dice
- (5 oz) Homemade Egg Noodles
- (1/4 cup) Fresh parsley, chopped
- (2) Fresh Thyme Sprigs, stems removed
- (1/4 tsp) Garlic Powder
- (2 Tbsp) Olive Oil
- Black pepper, ground
- Salt
Directions
- Add olive oil to the pot. Add the onion and sauté until soft and transparent, about 5 minutes. Add carrot and celery and continue to sauté a few more minutes. Add garlic powder.
- Add chicken stock and season the broth with thyme, black pepper, and salt. Try before adding more salt.
- Bring broth to a boil. Add freshly made egg noodles. Add chopped parsley and chicken. Remove the pot from the heat as soon as the noodles are just barely tender.
