Ingredients

  • (2) Whole Cornish Poussins
  • (1) Large Potato
  • (1) Large Apple
  • (1) Medium Onion
  • (2 tbsp) Mustard
  • (2 tbsp) Mayonnaise
  • (1 Sprig) Fresh Rosemary
  • (1 tsp) Lavender
  • (1 tsp) Paprika
  • (1/4 tsp) Chili Powder
  • (1 tsp) Garlic Powder
  • Any greens according to preference for garnish
  • Salt according to taste

Directions

  • Marinate Poussins overnight: Combine all spices except lavender. Add mustard and mayonnaise to it. Cut the onion in half-moons. Chop rosemary. Cover birds with flavorful marinade, onion, and lavender.
  • Next day, preheat oven to 325F. Cut the potato and apple into wedges. 
  • Place birds in the middle of your baking sheet or ceramic bakeware. Keep the onion and marinade with the meat. Arrange the potato and apple wedges around them. Sprinkle with lavender. Add some paprika on wedges or your favorite spice mix.
  • Bake for about 50 minutes. 
  • Remove the birds from the oven and let them rest 5-10 minutes. Arrange the plate with any greens on top. You can also use salsa verde or pesto according to preference. Enjoy!
