Potato Soup with Celebration Bacon
Potato soup with Celebration Bacon is a perfect meal for cold weather. For this recipe, we recommend EcoFriendly’s Celebration Bacon, but you can choose from a variety of their bacon flavors. Potatoes are cultivated in nearly every region across the United States and hold a special place in people's hearts internationally, as diverse cultures have relied on this adaptable vegetable to endure wars and food shortages. Personally, I have always valued this humble crop, as my family cultivates a large potato field, and I spent my summers working there as a child to prepare for the winter months.

Ingredients

  • (1 lb.) Celebration Bacon
  • (2 qts.) Chicken Stock
  • (4 lb.) Potato
  • (1 medium) Onion
  • (2 large) Carrot
  • (4 sticks) Celery
  • (4 large cloves) Garlic
  • (3/4 cup) All-Purpose Flour
  • (2.5 oz) Butter
  • (1/2 tsp.) Italian Seasoning
  • (1/4 tsp.) Paprika
  • (1/4 tsp.) Chili Powder
  • (To taste) Ground Black Pepper
  • (To taste) Salt

Directions

- Add the diced bacon to a hot soup pot or Dutch oven. Cook on medium heat until bacon is crispy and golden brown.

- Remove bacon pieces and place on a paper towel-lined plate, and set aside. Leave bacon fat in the pot.

- Add butter, onion, carrot, and celery. Sauté about 5 minutes. Add garlic. Sauté 1 more minute.

- Stir in the flour until smooth and flour is cooked, about 3-5 minutes, ensuring the raw flour taste is eliminated.

- Add cold or room temperature chicken stock to the pot by whisking it all the time. Make sure to scrape up from the bottom. Add Italian Seasoning, paprika, and chili powder.

- Add diced potato and bacon. You can reserve some of the bacon to garnish the plate. Bring to a boil. Reduce heat to a rapid simmer. Cook with slightly open lid until potato is fall-apart tender (25-40 minutes). Stir every so often.

- Add salt and pepper to taste.
